Crisp, summery, salty, and simply refreshening. You know it's a hot summer day when we're adding citrus to a salad. Paired with fennel, avocado, and mint this recipe is one of our hot-season-favourites.
What you will need:
- Citrus: For the perfect flavour combination, we recommend using grapefruit, navel orange, and blood orange. Mandarins and tangelos would also be a great fit.
- Fennel, 2 ways – Thinly slice one bulb and leave it raw for crunch. Then, slice another into wedges and roast it for an extra caramelized flavour.
- Radicchio – We know, the leaves are quite bitter and hearty but trust us: it will balance the sweetness.
- Avocado – Its creamy texture pairs perfectly with the crunch of fennel.
- Shaved pecorino cheese – For a salty and hearty touch.
- Pine nuts – For an extra crunch and off course its unique flavour. We love pine nuts!
- Fresh mint – This salad can't be complete without fresh mint to make this salad feel fresh and light.
